Additional Information: Genmai is unpolished whole grain rice that is produced by removing only the husk. Although it is usually brown it can also be reddish or purpish in color. Brown rice becomes white when the outer bran layer is stripped off in the milling or "whitening" process, leaving the rice mostly comprised of carbohydrate.
